The tenderloin steak comes from a small piece of muscle that runs along the bison's lower back and does very little work. These soft little muscles make for nice, tender steaks.

Believe it or not, the tenderloin is not considered the most flavourful steak from an animal but because of the tenderness of the meat, chefs and BBQer's alike love the cut, especially when well-marinated or wrapped in bacon.
