Cook the perfect bison steak

Getting the perfect cook on a bison steak is easy, as long as you keep in mind these special tips: 

  1. Warm the steaks to room temperature before cooking. Do this by letting the bison steaks rest for about an hour outside the fridge.  
  2. Salt near the end of cooking, NOT before. Salt draws out moisture, and bison is low in fat. Keep your steaks nice and juicy by salting later.
  3. Aim for rare to medium-rare. Bison is a lean meat, so be careful not to overcook it!

Instructions

Skillet

    1. Heat oil in a skillet over medium-high heat for a few minutes until the oil starts to bubble slightly. 
    2. Place the steak away from you in the skillet. 
    3. Flip the steak every 2-3 minutes to keep it nice and juicy. Sear each side twice. See the charts below for exact cooking times. 
    4. Remove the steak from hot pan, and let it rest for at least 5 minutes. The steak continues to cook during this time.
    5. Bon appétit! 

BBQ

    1. Preheat the BBQ on high heat for at least 15 minutes. It needs to be hot: Around 475° – 500°F.
    2. Place the steak on the grill. 
    3. Flip the steak every 2-3 minutes to keep it nice and juicy. Sear each side twice. See the charts below for exact cooking times. 
    4. Once the steaks are cooked let them rest for 5 minutes. The steak continues to cook during this time.   Bon appétit! 

TIP! Using a fork to turn the steaks punctures the meat, Use tongs instead.
