Getting the perfect cook on a bison steak is easy, as long as you keep in mind these special tips:
- Warm the steaks to room temperature before cooking. Do this by letting the bison steaks rest for about an hour outside the fridge.
- Salt near the end of cooking, NOT before. Salt draws out moisture, and bison is low in fat. Keep your steaks nice and juicy by salting later.
- Aim for rare to medium-rare. Bison is a lean meat, so be careful not to overcook it!

Skillet
- Heat oil in a skillet over medium-high heat for a few minutes until the oil starts to bubble slightly.
- Place the steak away from you in the skillet.
- Flip the steak every 2-3 minutes to keep it nice and juicy. Sear each side twice. See the charts below for exact cooking times.
- Remove the steak from hot pan, and let it rest for at least 5 minutes. The steak continues to cook during this time.

BBQ
- Preheat the BBQ on high heat for at least 15 minutes. It needs to be hot: Around 475° – 500°F.
- Place the steak on the grill.
- Flip the steak every 2-3 minutes to keep it nice and juicy. Sear each side twice. See the charts below for exact cooking times.
- Once the steaks are cooked let them rest for 5 minutes. The steak continues to cook during this time. Bon appétit!
